The Land of Israel is richly blessed with a unique, varied and plentiful floral abundance………." A land of wheat and barley, of vines, fig trees and pomegranates, a land of olives, oil and honey" (Deuteronomy 8/8).

Israel has traditionally been the producer of honey for many thousands of years. Beekeeping was one of the most important branches of agriculture. In spite of the fact that it is one of the smallest countries in the world, Israel`s climate, landscape and vegetation are extremely diverse. On a three hour drive one can traverse the country from the desert on the Egyptian border in the south, via the Mediterranean coastal plain in the west, through the valleys in the east, to the snowy mountains in the north.

The variety of plants from which the bees extract the nectar and collect the pollen is extremely extensive, flowering throughout all seasons of the year. Some of these are wild flowers and others are cultivated.

Lamdani`s hives are moved between the areas according to the flowering seasons and varieties. The honey is extracted carefully to keep each area and variety separate.

The division of these different areas match the Biblical separation of Israel into the Lands of the 12 Tribes, descendants of the 12 sons of Jacob. With the return from Babylon 3,500 years ago, to the land of Israel, each one of the tribes settled in their own land, being distinguished by a specific flag, symbol and colour. This matched the gems worn on the priestly vestment in the Temple.

Honey is characterized by its colour, aroma and taste according to the dominant flower of each area and specific season. The flavour is also influenced by other less dominant flowers, which help to enhance the overall fragrance of the final product.
